However, the sun appeared at the end of August and continued throughout September. The harvest commenced in mid-September in perfect conditions. Careful selection of grapes in the vineyard and winery have produced beautiful wines with very pure aromas. Aged in French oak for 10 months.<br><b>Tasting :</b>Bright ruby colour. Aromas of red berries and spices and enhanced by a hint of vanilla. Generous and well-crafted. Very pure fruit on refined oak notes. Well-shaped tannic structure. Good persistance. <br><b>Food Pairing</b>Roasted, grilled or marined meat, game, classical cheeses.<br><br><br><br><h3>Volnay&nbsp;2005</h3><h4>The Vine</h4><b>Variety :</b>Pinot Noir<br><b>Soil :</b>marl and limestone<br><b>Site :</b>This vineyard is located on the commune of Volnay, famous for its great red wines among the best in the C&ocirc;te de Beaune.<br><br><br><h4>The Wine</h4><b>Vintage 2005 :</b>Harvest took place in the early days of September after a dry and very hot summer after a superb growing season - long and cold winter followed by a rainy and humid spring. Exceptional weather conditions for an exceptional vintage. Full maturation of the grapes and good concentration. Aging in oak cask during 15 months<br><b>Tasting :</b>Bright ruby colour. Aromas of cooked red berries mixed with spices and vanilla notes. Appealing, elegant and well-structured on a subtle oak note associated with well-shaped tannins. Persistent aftertaste. <br><b>Food Pairing</b>Roasted, grilled or marined meat, game, classical cheeses.<br><br><br><br><h3>Volnay&nbsp;2000</h3><h4>The Vine</h4><b>Variety :</b>Pinot Noir<br><b>Soil :</b>marl and limestone<br><b>Site :</b>This vineyard is located on the commune of Volnay, famous for its great red wines among the best in the C&ocirc;te de Beaune.<br><br><br><h4>The Wine</h4><b>Vintage 2000 :</b>After a quick bud burst, followed by an early flowering period (beginning of June), some rain and cool temperatures in July slowed down the ripening of the grapes. Good weather at the end of the summer and a prolonged hot period in early September, which ensured good concentration of the juice.<br><b>Tasting :</b>Ruby colour with purple tinges. Aromas of red berries in jam on spicy and vanilla notes. Charming, elegant, aromatic combination of plum and candied cherries enhanced by a delicate oak note. Pluviometry limited. Optimal harvests conditions and good grapes maturity. Very good sanitary statement.<br><b>Tasting :</b>Ruby colour with purple tinges. Aromas of red fruit in jam (rapsberry, redberry) and plum mixed with spices and enhanced by a hint of vanilla. Charming flavours of ripe red fruit (strawberry,rapsberry). It was as a whole homogeneous. Aging in cask during 12 months. <br><b>Tasting :</b>Ruby colour with purple tinges. Aromas of red fruit (mixed with spices and enhanced by a hint of vanilla.
