Site :The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvée is a blend of grapes sourced from selected plots among the Premiers Crus of the domaine located on the hill of Beaune.
The Wine
Vintage 2007 :The weather at the start of summer was quite demanding. It became fine again from the end of August with much sun and a north wind, which aided concentration of flavours and gave rise to an exceptional phenolic maturity. The harvest commenced in mid-September in perfect conditions under an Indian summer. This results in red wines with a crunchy flesh and an explosion of red fruits marvellously combined with the minerality of the terroirs.
Aged in French oak during 15 months.
Tasting :Bright ruby colour. Intense aromas of raspberry and blackberry mixed with spicy nuances.
Dense and well-structured. Very refreshing fruit aromas. Well-shaped tannins and sublte oak note. Long and generous aftertaste.
Food PairingRed meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Epoisses, Citeaux and Langres.

The Wine
Vintage 2006 :The weather at the start of summer was quite demanding. However, the sun appeared at the end of August and continued throughout September. The harvest commenced in mid-September in perfect conditions. Careful selection of grapes in the vineyard and winery have produced beautiful wines with very pure aromas.
Aged in French oak for 10 months.
Tasting :Bright ruby colour. Aromas of red berries (red berries) and liquorice mixed with spicy nuances and a hint of vanilla.
Well-balanced, well-structured and mellow. Delicate oak note. Fine tannins. Persistant aftertaste.
Food PairingRed meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Epoisses, Citeaux and Langres.

The Wine
Vintage 2005 :Harvest took place in the early days of September after a dry and very hot summer after a superb growing season - long and cold winter followed by a rainy and humid spring.
Exceptional weather conditions for an exceptional vintage.
Full maturation of the grapes and good concentration.
Aging in oak cask during 15 months
Tasting :Bright ruby colour. Intense aromas of red berries (raspberry) and ripe plum on spicy nuances.
Dense and compact. Well-balanced on a delicate oak structure and an important layer of tannins. Persistant aftertaste.
Food PairingRed meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Epoisses, Citeaux and Langres.

The Wine
Vintage 2004 :Harvest took place at the end of september after a cool and humid Summer with short periods of very hot weather. The "tri", sorting of the grapes was drastic to keep only the very ripe berries. The combination of strictly controlled yields and a meticulous vinification process played a major part in the quality of the vintage.
Aging in casks during 15 months
Tasting :Bright ruby colour. Intense aromas of red berries mixed with delicate spicy nuances.
Well structured and generous. Beautiful aromatic complexity enhanced by subtle oak notes. Persistant aftertaste.

The Wine
Vintage 2002 :The harvest took place at the end of September, several days after the official beginning of the harvest in order to obtain the best possible maturation of the berries. Excellent weather conditions prevailed in August and September and hence the good quality of the grapes. A severe pruning had been carried out in July 2002 to limit yields.
Aging in oak casks during 16 months.
Tasting :Bright ruby colour. Intense aromas of red berries with a hint of chocolate enhanced by toasted brioche nuances.
Elegant, charming. Very stylish and harmonious. Well structured and generous, beautiful aromatic complexity enhanced by subtle oak notes.
Food PairingRed meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Epoisses, Citeaux and Langres.
