<h1>Bourgogne CHANSON Père & Fils</h1> <h2>Depuis 1750 à Beaune</h2> <h3>Clos des Mouches Beaune 1er Cru Pinot Noir 2007</h3><h4>The Vine</h4><b>Variety :</b>Pinot Noir<br><b>Soil :</b>Marl with sandy yellow limestone <br><b>Site :</b>Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. Ideal location on the hill at the southern end of the vineyards of Beaune on a spur pointing toward Pommard . A plot of 2.5 hectares is planted with Pinot Noir on a limestone subsoil covered with clay.<br><br><br><h4>The Wine</h4><b>Vintage 2007 :</b>The weather at the start of summer was quite demanding. It became fine again from the end of August with much sun and a north wind, which aided concentration of flavours and gave rise to an exceptional phenolic maturity. The harvest commenced in mid-September in perfect conditions under an Indian summer. This results in red wines with a crunchy flesh and an explosion of red fruits marvellously combined with the minerality of the terroirs. Aged in French oak during 16 months.<br><b>Tasting :</b>Dark ruby colour. Intense aromas of raspberry and cherry blossom with a hint of cocoa and an array of spices. Complex, refined and well-balanced. Beautiful texture. Harmonious oak note and fine grained tannins. Good persistence with a touch of cocoa at the end. <br><b>Food Pairing</b>Can be enjoyed with red meat, grilled or &quot;en sauce&quot; and our local cheeses like Epoisses, Citeaux and Langres.<br><br><br><br><h3>Clos des Mouches Beaune 1er Cru Pinot Noir 2006</h3><h4>The Vine</h4><b>Variety :</b>Pinot Noir<br><b>Soil :</b>Marl with sandy yellow limestone <br><b>Site :</b>Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. A plot of 2.5 hectares is planted with Pinot Noir on a limestone subsoil covered with clay.<br><br><br><h4>The Wine</h4><b>Vintage 2006 :</b>The weather at the start of summer was quite demanding. However, the sun appeared at the end of August and continued throughout September. The harvest commenced in mid-September in perfect conditions. Careful selection of grapes in the vineyard and winery have produced beautiful wines with very pure aromas. Aged in French oak for 12 months.<br><b>Tasting :</b>Dark ruby colour. Intense aromas of fresh red berries and liquorice with a hint of cocoa and vanilla. Ample, well-crafted and dense. Harmonious oak note and fine grained tannins. Good persistence.<br><b>Food Pairing</b>Can be enjoyed with red meat, grilled or &quot;en sauce&quot; and our local cheeses like Epoisses, Citeaux and Langres.<br><br><br><br><h3>Clos des Mouches Beaune 1er Cru Pinot Noir 2005</h3><h4>The Vine</h4><b>Variety :</b>Pinot Noir<br><b>Soil :</b>limestone with clay<br><b>Site :</b>Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. Ideal location on the hill at the southern end of the vineyards of Beaune on a spur pointing toward Pommard . A plot of 2.5 hectares is planted with Pinot Noir on a limestone subsoil covered with clay.<br><br><br><h4>The Wine</h4><b>Vintage 2005 :</b>Harvest took place in the early days of September after a dry and very hot summer after a superb growing season - long and cold winter followed by a rainy and humid spring. Exceptional weather conditions for an exceptional vintage. Full maturation of the grapes and good concentration. Aging in oak cask during 15 months.<br><b>Tasting :</b>Dark ruby colour. Intense aromas of red berries mixed with cocoa and vanilla. Ample, generous and well-crafted. Good aromatic density. Harmonious oak note and well-defined tannic structure. Good persistence.<br><b>Food Pairing</b>Can be enjoyed with red meat, grilled or &quot;en sauce&quot; and our local cheeses like Epoisses, Citeaux and Langres.<br><br><br><br><h3>Clos des Mouches Beaune 1er Cru Pinot Noir 2003</h3><h4>The Vine</h4><b>Variety :</b>Pinot Noir<br><b>Soil :</b>limestone with clay<br><b>Site :</b>Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. A plot of 2.5 hectares is planted with Pinot Noir on a limestone subsoil covered with clay.<br><br><br><h4>The Wine</h4><b>Vintage 2003 :</b>An exceptionnally early harvest end of August due to an outstanding hot summer. Grapes were extremely well mature wth high concentration. Very low yields. Grapes had to be cooled down before pressing.<br><b>Tasting :</b>Bright ruby colour. Intense aromas of red fruit (raspberry) and leather mixed with a hint of chocolate. Outstanding vanilla note. Ample, generous, concentrated, with a good aromatic combination. Tannins are present but not too edgy; Good persistence.<br><b>Food Pairing</b>Can be enjoyed with red meat, grilled or &quot;en sauce&quot; and our local cheeses like Epoisses, Citeaux and Langres.<br><br><br><br><h3>Clos des Mouches Beaune 1er Cru Pinot Noir 2002</h3><h4>The Vine</h4><b>Variety :</b>Pinot Noir<br><b>Soil :</b>limestone with clay<br><b>Site :</b>Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. A plot of 2.5 hectares is planted with Pinot Noir on a limestone subsoil covered with clay.<br><br><br><h4>The Wine</h4><b>Vintage 2002 :</b>The harvest took place at the end of September, several days after the official beginning of the harvest in order to obtain the best possible maturation of the berries. Excellent weather conditions prevailed in August and September and hence the good quality of the grapes. A severe pruning had been carried out in July 2002 to limit yields. Aging in oak casks during 18 months.<br><b>Tasting :</b>Bright ruby colour. Intense aromas of red berries (raspberries, redberries ) mixed with spicy nuances and enhanced by a beautiful vanilla note. This wine is elegant with a lot of breed. It is lively with depth and develops an array of aromas of red berries enhanced by a subtle oak note.
