Site :"Les Clos" is one of the most famous Grands Crus of Chablis. The area of production covers 24.75 ha. The vines selected by Chanson are ideally located right in the heart of the plot. The upper part of the plot brings the minerality and the lower part with alluvion deposits gives the rich character of this wine.
The Wine
Vintage 2007 :After a very warm spring, the weather at the start of summer was quite demanding. It became fine again from the end of August with much sun and a north wind, which aided concentration of flavours. The harvest commenced in mid-September in perfect conditions under an Indian summer. Careful selection of grapes in the vineyard and winery with regular batonnage (stirring of the lees in the barrel) have produced very pure white wines, well-balanced with fantastic acidity.
Aging in demi-muids cask during 11 months.
Tasting :Pale gold colour. Intense floral fragrances mixed with aromas of green apple, honey and vanilla enhanced by a very refined minerality.
Generous, dense and complex. Dense Texture. Well-structured. Tense and lean. Beautiful aromatic combination. Well-integrated minerality. Outstanding persistence.
Food PairingFoie gras, shellfish, fish, white meat as well as some goat cheeses.

The Wine
Vintage 2006 :The weather at the start of summer was quite demanding. However, the sun appeared at the end of August and continued throughout September. The harvest commenced in mid-September in perfect conditions. Careful selection of grapes in the vineyard and winery have produced beautiful white wines with fantastic acidity.
Aged in French oak for 10 months.
Tasting :Pale gold colour. Intense floral fragrances mixed with aromas of green almond, honey and vanilla enhanced by a very refined minerality.

The Wine
Vintage 2005 :Exceptionnal after a superb growing season - cold winter, rainy spring followed by hot and dry summer. Grapes picked at optimum ripeness and in perfect health, hence a minimum sorting was required.
Aging in cask during 12 monts.
Tasting :Pale gold colour. Floral fragrances mixed with aromas of exotic fruit and vanilla enhanced by a very refined minerality.
Elegant, generous and well-structured. Harmonious aromatic combination. Beautiful minerality. Outstanding pesistence.

Soil :Mix of Limestone sediments and fossiles called "Kimmeridgien"
Site :"Les Clos" is one of the most famous Grands Crus of Chablis. The vineyard is located on exceptionnal "terroir" on the hill overlooking the village of Chablis
The Wine
Vintage 2004 :Harvest took place at the end of september after a cool and humid Summer with short periods of very hot weather. The "tri", sorting of the grapes was drastic to keep only the very ripe berries. The combination of strictly controlled yields, a good acidity and a meticulous vinification process results in a great vintage for white Burgundy.
Aging in casks during 14 months
Tasting :Pale gold colour with green nuances. Refreshing floral fragrances and citrus fruit aromas enhanced by a very clean minerality and subtle vanilla notes. Elegant, well-structured and well-balanced. Intense aromatic complexity and good minerality. Very long finish.
Food PairingFoie gras, shellfish, fish, white meat as well as some goat cheeses.

The Wine
Vintage 2003 :An exceptionnally early harvest end of August due to an outstanding hot summer. Grapes were extremely well mature wth high concentration.
Tasting :Pale gold colour. Floral fragrances (hawthorn) mixed with ripe pale fleshed fruit aromas and enhanced by a beautiful minerality.
Elegant, generous and well-structured. Good aromatic complexity and good minerality. Very long finish.
Food PairingFoie gras, shellfish, fish, white meat as well as some goat cheeses.
