The particular nature of the soil &amp;quot;Hauts Marconnets&amp;quot; with Marl, chalk and limestone encouraged Chanson to plant Chardonnay. The vineyard of 2,18 hectares is ideally situated high up on the hill of Savigny-les-Beaune, facing south-east, close to the hills of Beaune 1er Crus.<br><br><br><h4>The Wine</h4><b>Vintage 2007 :</b>After a very warm spring, the weather at the start of summer was quite demanding. It became fine again from the end of August with much sun and a north wind, which aided concentration of flavours. The harvest commenced in mid-September in perfect conditions under an Indian summer. Careful selection of grapes in the vineyard and winery with regular batonnage (stirring of the lees in the barrel) have produced very pure white wines well-balanced with fantastic acidity. Aged in oak during 14 months.<br><b>Tasting :</b>Pale gold colour. Floral fragrances mixed with yellow fruit aromas and honey. Refreshing mineral note on a hint of vanilla. Linear, well-structured and well-crafted. Very pure aromatic combination. Well-integrated minerality and elegant oak note. Floral fragrances mixed with aromas of citrus fruit, almond and honey. Beautiful vanilla note. El&eacute;gant, well-structured and generous. Beautiful aromatic combination enhanced by a well-integrated minerality and a delicate oak note.
