Rebsorte : Chardonnay

Boden : Clay and limestone covered with stones

Lage : A very small single vineyard shared between Chanson and the Hospices de Beaune on a hump of the hill of Corton. The vineyard used to belong to the Count of Vergennes, who was counselor to Louis XVI and signatory for the Treaty of Independence with the United States of America.

Der Jahrgang 2003 : An exceptionally early harvest end of August due to an outstanding hot summer. Grapes were extremely well mature with high concentration. Very low yields. Grapes had to be cooled down before pressing.

Verkostung : Pungent bouquet of apricots, honey et bee-wax mixed with floral fragrances ( acacia ) and enhanced by a subtle minerality. It is showing structure with fine density and energetic finish

Servierempfehlung : Seafood, “foie gras”, fish in a creamy sauce, crayfish. Particularly great with a selection of French cheeses.
