Lage : Savigny white wines are very unusual, the vineyard produces indeed essentially red wines. The particular nature of the soil "Hauts Marconnets" with Marl, chalk and limestone encouraged Chanson to Chardonnay. The vineyard of 2,18 hectares is ideally situated high up in the hill of Savigny, facing south-east, close to the hills of Beaune 1er Crus.
Der Jahrgang 2002 : The harvest took place at the end of September, several days after the official beginning of the harvest in order to obtain the best possible maturation of the berries. Excellent weather conditions prevailed in August and September and hence the good quality of the grapes. A severe pruning had been carried out in July 2002 to limit yields. Aging in new oak casks during 12 months.
Verkostung : Pale gold with green tinges. Floral fragrances with yellow fruits (peach)on a honeyed note, enhanced by a hint of vanilla. The attack is weever and appealing. This wine is well structured and harmonious. It owns a delicate wooded which heights its outstanding aromatic complexity.
Servierempfehlung : Shellfish, fish and some cheeses (like goat cheese).
