Site : The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvée is a blend of grapes sourced from selected plots among the Premiers Crus of the domaine located on the hill of Beaune.
The Vintage 2001 : Harvest took place at the end of September after a late Summer. It was as a whole homogeneous but the "tri", sorting of the grapes was drastic to keep only the very ripe berries. Aging in oak cask during 18 months.
Tasting : Bright red colour. Aromas of red berries (raspberry) and violet enhanced by spicy nuances. It develops intense aromas of red fruit mixed with mild spices and enhanced by subtle oak flavours. Concentrated, complex, harmonious and well-balanced, with a good tannic structure and a good persistence.
Food pairing : Red meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Époisses, Citeaux and Langres.
