Site : The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvée is a blend of grapes sourced from selected plots among the Premiers Crus of the domaine located on the hill of Beaune.
The Vintage 2003 : An exceptionnally early harvest end of August due to an outstanding hot summer. Grapes were extremely well mature wth high concentration. Very low yields. Grapes had to be cooled down before pressing. Aging in cask during 10 months.
Tasting : Bright ruby colour. Intense aromas of red berries (raspberry) and liquorice on spicy nuances. Generous and concentrated. Well-balanced on a delicate oak structure and an important layer of tannins. Persistent aftertaste.
Food pairing : Red meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Époisses, Citeaux and Langres.
