Site : The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvée is a blend of grapes sourced from selected plots among the Premiers Crus of the domaine located on the hill of Beaune.
The Vintage 2005 : Harvest took place in the early days of September after a dry and very hot summer after a superb growing season - long and cold winter followed by a rainy and humid spring. Exceptional weather conditions for an exceptional vintage. Full maturation of the grapes and good concentration. Aging in oak cask during 15 months
Tasting : Bright ruby colour. Intense aromas of red berries (raspberry) and ripe plum on spicy nuances. Dense and compact. Well-balanced on a delicate oak structure and an important layer of tannins. Persistent aftertaste.
Food pairing : Red meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Époisses, Citeaux and Langres. This wine was awarded 91/100 in the Wine Spectator Insider - March 26, 2008.
