Soil : Mix of clay and limestone

Site : The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvée is a blend of grapes sourced from selected plots among the Premiers Crus of the domaine located on the hill of Beaune.

The Vintage 2008 : After a beautiful Spring, the weather at the start of Summer was quite demanding. It became fine again from the end of August with much sun and a cold wind, which aided concentration of flavours. The harvest commenced in mid-September in perfect conditions under an Indian Summer. Aging in oak during 15 months

Tasting : Bright ruby colour. Intense aromas of raspberry and red-berry mixed with chocolate and spicy nuances. Beautiful vanilla note. Dense and well-structured. Very pure fruit. Beautiful texture. Well-shaped tannins and subtle oak note. Refreshing and generous aftertaste.

Food pairing : Red meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Époisses, Citeaux and Langres.
