Site : The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars.This cuvée is a blend of grapes sourced from selected plots among the Premiers Crus of the Domaine - Beaune Clos du Roi, Beaune Clos des Marconnets, Beaune Bressandes, Beaune Teurons, Beaune Champimonts, Beaune Clos des Mouches and Beaune Clos des Fèves Monopole. This association of the different terroirs of Beaune Premiers Crus and among them the flagships of Chanson give to the wine a unique character and texture.
The Vintage 2009 : After a cold winter and a beautiful spring, the hot summer was interrupted by stormy intervals which fortuitously took place when needed and thus facilitated growth and good maturation of the grapes. Harvest began early September with excellent weather conditions. This Beaune Bastion has been aged during 20 months in oak casks with a proportion of 20 pct of new oak. Malolactic fermentation in casks of 228 liters.
Tasting : Bright ruby colour. Intense aromas of raspberry mixed with cacao and spicy nuances. Beautiful vanilla note. Dense and well-structured. Very pure fruit. Beautiful texture. Elegant tannins and subtle oak note. Refreshing and generous aftertaste.
Food pairing : Red meat grilled or en sauce and all sorts of cheeses, especially our local cheeses like Époisses, Citeaux and Langres.
