Site : The Premiers Crus vineyards of Domaine Chanson are aged in casks in the Bastion cellars. This cuvée is a blend of grapes sourced from selected plots among the Premiers Crus of the domaine located on the hill of Beaune.
The Vintage 2001 : Harvest took place at the end of September after a late Summer. It was as a whole homogeneous but the "tri", sorting of the grapes was drastic to keep only the very ripe berries. Aging in cask during 10 months
Tasting : Nice gold colour. Floral fragrances (hawthorn) mixed with grilled almond and honey enhanced by a vanilla note. Elegant, charming, harmonious, well-balanced, generous with a good concentration, subtle wooded note and good persistence.
Food pairing : Seafood, fish, "foie gras", white meat and some goat cheeses.
