Grape Variety : Pinot Noir
Soil : Limestone with clay
Site : On the southern hill of Beaune, a vineyard of 2 hectares, mid slope facing East.
The Vintage 2002 : The harvest took place at the end of September, several days after the official beginning of the harvest in order to obtain the best possible maturation of the berries. Excellent weather conditions prevailed in August and September and hence the good quality of the grapes. A severe pruning had been carried out in July 2002 to limit yields. Aging in oak casks during 18 months.
Tasting : Bright ruby colour. Aromas of red berries with a touch of liquorice spice and white pepper. This wine is classy and appealing. It is complex, harmonious, smooth and supple.
Food pairing : It is perfectly matched with red meat grilled or en sauce and all cheeses, especially the local cheeses like Epoisses or Citeaux. Gold medail at the Concours General Agricole in Paris in 2005.
