Site : Plot-based selection on hills ideally located south of the village of Chablis.

The Vintage 2006 : The weather at the start of summer was quite demanding. However, the sun appeared at the end of August and continued throughout September. The harvest commenced in mid-September in perfect conditions. Careful selection of grapes in the vineyard and winery have produced beautiful white wines with fantastic acidity.

Tasting : Pale gold colour with emerald tinges. Very refreshing floral aromas mixed with hints of citrus fruit and minerality. Beautiful structure, crisp and fresh. Harmonious body with long length. Alcohol Percentage : 12.6 % Total Acidity (H2SO4) : 3.2 g/l Ph : 3.29

Food pairing : Pâté, lobsters and poultry as well as some goat cheeses.
