The Vintage 2000 : After a quick bud burst, followed by an early flowering period (beginning of June), some rain and cool temperatures in July slowed down the ripening of the grapes. Good weather at the end of the summer and a prolonged hot period in early September, which ensured good concentration of the juice. Aging in cask during 12 months.
Tasting : Dark ruby colour. Aromas of black plum, liquorice and tobacco mixed with toasty nuances and spices. Beautiful vanilla note. Well-structured and well-balanced. Elegant and velvety tannins. Well integrated oak note good persistence.
Food pairing : Poultry, grilled meat or "en sauce" and all the classic cheeses (Epoisses, Langres).
