Site : Chanson is one of the major owners of Clos des Mouches with a vineyard of 4.5 hectares. Ideal location on the hill at the southern end of the vineyards of Beaune on a spur pointing toward Pommard . A plot of 2 hectares on the upper side of the hill is planted with Chardonnay on a limestone subsoil covered with sand.
The Vintage 2001 : Harvest took place at the end of September after a late Summer. It was as a whole homogeneous but the "tri", sorting of the grapes was drastic to keep only the very ripe berries. Aging in cask during 10 months
Tasting : Gold colour with emerald tinges. Intense floral fragrances (acacia) mixed with pale fleshed fruit (peach) underlined by a subtle hint of vanilla. Elegant, full-bodied, well-balanced and very charming. Honey flavours combined with subtle notes of oakiness on the palate. Well concentrated with a hint of minerality, long aftertaste.
Food pairing : To be enjoyed with "foie gras", seafood and goat's cheese.
