Grape Variety : Pinot Noir
Soil : Marl, chalk and limestone.
Site : Named after the latin "Dominus", "Vineyard of the Lord" an indication that this area was formerly owned by the Lord of Savigny. This vineyard is North East oriented on mid-slope.
The Vintage 2004 : Harvest took place at the end of September after a cool and humid Summer with short periods of very hot weather. The "tri", sorting of the grapes was drastic to keep only the very ripe berries. The combination of strictly controlled yields and a meticulous vinification process played a major part in the quality of the vintage. Aging in casks during 15 months
Tasting : Dark ruby colour with purple tinges. Intense aromas of red berries jam(cherry, raspberry), liquorice and chocolate enhanced by a touch of vanilla. Elegant, complex and well-balanced. Beautiful aromatic combination enhanced by tannins with no sharp bones. Beautiful oak note and long aftertaste.
Food pairing : Red and white meat roasted or "en sauce", game, cheeses.
